Ingredients

  • 6 - 8 plumsย 
  • 1/3 cup light brown sugar
  • 2 tablespoons apple brandy
  • 1 teaspoon vanilla extract
  • 3 tablespoons cornstarch
  • 1 teaspoon ground cinnamon

  • 1 cup all purpose flour
  • 1 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/3 cup sugar
  • 8 tablespoons unsalted butter cubed & cold
  • 2/3 cup heavy whipping cream
  • 1 tablespoon coarse sugarย 
  • Vanilla ice cream to serve (optional but highly recommended)

Step 1

Prepare The Plum Filling

Preheat the over to 375 F.ย 

In a large bowl, combine the sliced plums, brown sugar, brandy, vanilla extract, cornstarch and cinnamon. Toss the plums gently until the plums are well coated. The cornstrach acts as a natural thickener, ensuring a beautifully textured filling

Step 2

Make the Topping

In a separate bowl, whisk together flour, granulated sugar, baking powder, and salt; set aside. Add the cold, cubed butter. Using a pastry cutter or your fingertips, blend the butter into the flour mixture until it resembles course crumbs. This technique is essential for achieving a delicate, crumbly topping. Step 3
