         For The Filling:

  • 6 - 8 plums
  • 1/3 cup light brown sugar
  • 2 tablespoons apple brandy
  • 1 teaspoon vanilla extract
  • 3 tablespoons cornstarch
  • 1 teaspoon ground cinnamon

          For The Topping:

  • 1 cup all purpose flour
  • 1 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/3 cup sugar
  • 8 tablespoons unsalted butter cubed & cold
  • 2/3 cup heavy whipping cream
  • 1 tablespoon coarse sugar
  • Vanilla ice cream to serve (optional but highly recommended)

Step 1

Prepare The Plum Filling

Preheat the over to 375 F.

In a large bowl, combine the sliced plums, brown sugar, brandy, vanilla extract, cornstarch and cinnamon. Toss the plums gently until the plums are well coated. The cornstrach acts as a natural thickener, ensuring a beautifully textured filling

Step 2

Make the Topping

In a separate bowl, whisk together flour, granulated sugar, baking powder, and salt; set aside. Add the cold, cubed butter. Using a pastry cutter or your fingertips, blend the butter into the flour mixture until it resembles course crumbs. This technique is essential for achieving a delicate, crumbly topping. Add the cream and stir with a fork until just moistened. Be mindful not to overmix to maintain the topping's lightness.

Step 3

Assemble the Cobbler

Pour the plum filling into a greased 9-inch baking dish. Drop spoonfuls of the topping over the fruit, spreading it as evenly as possible. The topping will expand and develop a beautiful golden crust as it bakes, contrasting wonderfully with the tender plums beneath.

Optional: Sprinkle with 1 tablespoon of coarse sugar for an added crunch

Step 4

Bake to Perfection

Place the cobbler in the preheated oven and bake for 40 - 45 minutes, or until the topping is golden brown and the filling is bubbling around the edges. The intoxicating aroma of baked plums and cinnamon will fill your kitchen.

Step 5

Serve and Enjoy!

Allow the cobbler to cool slightly before serving. For an extra touch of indulgence, pair it with a scoop of vanilla ice cream or a dollop of fresh whipped cream. The combination of warm, spiced plums and the cool, creamy accompaniment is pure bliss!

Tips for the Perfect Plum Cobbler

  • Select the Best Plums - Opt for ripe, organic plums that yield slightly when pressed. Their natural sweetness and juiciness are key to a delectable cobbler.
  • Tailor the Sweetness -  Taste the plums before preparing the filling. Adjust the sugar and brandy accordingly to balance the natural tartness.
  • Play with Spices - While cinnamon is classic, consider adding a pinch of cardamom for an exotic twist
  • Keep the Butter Cold - Ensure your butter is very cold before incorporating it into the flour mixture. This step is crucial for a light, flaky topping.

  • Berry Variations : Feel free to mix and match different types of berries based on your preference and what's in season.
